Does anyone have any good dessert recipes for people that are gluten intolerant?

For my food technology coursework i am researching gluten free desserts.


Included in my coursework i need to make at least 6 desserts that are gluten free, so does anyone have any ideas of what i could make? Does anyone have any good dessert recipes for people that are gluten intolerant?
Danish Apple Pudding








Ingredients: to serve four





1lb / 450g cooking apples


2 oz or 50g sugar


2 oz or 50g butter or margarine


2 oz or 50g ground almonds


1 egg














Instructions:








Peel and core the apples and cook with the minimum of water (microwave with no added water). Add sugar to taste.





Cream the butter and sugar together and beat in the almonds. Beat the egg on its own and then beat into the almond mixture.





Spread the cooked apple in a pie dish and then cover with the almond mixture.








Cooking:








gas mark 4 350掳F 180掳C





Cook for twenty five to thirty five minutes or until lightly set and golden.








Serve hot or cold with ice cream, whipped cream or yogurt.

Do your desserts need to include specific 'gluten free ingredients' or just not have gluten in them. My family are mostly coelic and the family favourite is chocolate mouse or lemon merrainge pie but i dont have the recipes on me at the moment. My dads all time favourite is melted cadburys bournville with fresh strawberries dipped in it and left to harden in the fridge. Dip them half way up and when chocolate set place in a dish with mint leaves...never fails.
You can bake regular desserts with gluten free flour. I also found two sites with some good gluten free dessert recipes.

Actually you can cook everything you want to, but using gluten-free flour from any large supermarket rather than wheat flour. You just need to read the pack as it works a little differently from standard wheat flour.

Rice pudding. very simple but could be embellished with dried fruit such as sultanas and apricots etc
