Does anyone have any good dessert recipes using stevia concentrate powder?

I've never heard of this stuff myself, but found this website -

I bought some stevia and I HATE the taste. I suppose baking might be a good way to mask this or neutralize it, at least... I found this online. Might be worth trying?





Banana Bread





1 loaf - 12 servings





2 very ripe, medium to large bananas


录 tsp powdered stevia extract


陆 tsp stevia concentrate


1 tbsp lemon juice


2 cups whole wheat pastry flour


陆 tsp baking soda


1 tsp baking powder


录 tsp salt


1/3 cup oil


1 large egg


陆 cup plain nonfat yogurt or buttermilk


1 tsp vanilla extract


陆 cup chopped walnuts (optional)


Preheat the over to 350 degrees F. Oil a medium-sized loaf pan (7 陆 ';x 3 陆 '; x 2 陆';).





Mash the bananas in a small bowl. Mix the stevia extract, stevia concentrate, and lemon juice into the mashed bananas. Set aside.





Sift the flour, leavenings, and salt together in a bowl.





Beat the oil and egg together in a mixing bowl until creamy. Beat in the yogurt or buttermilk and the vanilla. Stir the mashed bananas into the liquid mixture.





Fold the dry ingredients into the wet ingredients, stirring as little as possible. Mix in the walnuts just before the flour is completely blended.





Place into the loaf pan. Bake for 50 minutes to 1 hour until a toothpick or fork stuck in the middle comes out clean. Turn out the loaf and cool on a rack.





Note: For maximum flavor, use very ripe bananas (brown spotted).Does anyone have any good dessert recipes using stevia concentrate powder?
Blueberry Cheesecake


2 cups finely ground almonds


1/4 cup oil


1/2 teaspoon salt


4 tablespoons flour


3 (8 ounce) packages cream cheese


3 eggs


2 cups blueberries


1/2 cup sour cream


16 packets stevia


--Mix together almonds, oil, salt and flour and press into a springform pan to form the crust. Mix together the remaining ingredients and pour on top of the crust. Bake at 400 degrees for 15 minutes, then 350 degrees for another 25 minutes until the top is lightly golden. Cool for one hour.





Sugar Free Chocolate Mousse


1 teaspoon gelatin


1 tablespoon cold water


1 tablespoon boiling water


6 teaspoons stevia, blend or 3/4 teaspoon stevia extract


1/4 cup cocoa powder


1 cup heavy whipping cream


1 teaspoon vanilla


--In a small bow, sprinkle gelatin over cold water and let stand 5 minutes to soften. Add boiling water, stirring until gelatin is completely dissolved and mixture is clear. Cool slightly. In medium bowl, stir together stevia and cocoa. Add whipping cream and vanilla. Beat at medium speed until stiff peaks form. Pour in gelatin mixture and beat until well blended. Spoon into serving dishes and chill for at least 1/2 hour.





Chocolate Chip Cookies


2 cups all-purpose flour


3/4 teaspoon sea salt


3/4 teaspoon baking powder


1 egg


1/2 teaspoon white stevia powder


1 teaspoon vanilla flavoring


1 cup salted butter, softened


1 1/4 cups chocolate chips


--Preheat the oven to 350 degrees F. Lightly grease a cookie sheet and set aside. In a medium mixing bowl, sift together the flour, salt, and baking powder, and set aside. Place the egg, stevia, and vanilla in a large mixing bowl, and beat well with a wooden spoon or an electric hand-held mixer. Slowly add the butter, continuing to beat until the mixture is smooth and creamy. Add the flour mixture to the butter mixture, 1/2 cup at a time, stirring well with a wooden spoon after each addition. Fold in the chocolate chips. Drop heaping teaspoons of batter on the cookie sheet, about 2 inches apart. Bake for 20 to 25 minutes, or until the cookies are golden brown.
