Any Diabetic Dessert recipes without nuts or seeds?

I've agreed to bake for my Grandparents 80th and 90th Birthday party. I need to bake for about 300 people and am running into road blocks with diets and allergies in the family. They cannot include nuts or seeds.Any Diabetic Dessert recipes without nuts or seeds?
Banana Honey Muffins:





Ingredients:


1 cup wholemeal self-raising flour


1 cup self-raising flour


2 teaspoons baking powder


1 teaspoon ground cinnamon


1/4 cup raw sugar


1/2 cup rolled oats


1 cup mashed banana


1/4 cup honey


1/4 cup extra-light olive oil


2 eggs, lightly whisked


1/3 cup low fat plain yoghurt


1/4 cup shredded coconut, toasted





Method:


Preheat oven to 390掳F. Lightly grease a 12-hole 1/3-cup capacity muffin pan.


Sift flours, baking powder and cinnamon into a bowl. Stir in sugar and rolled oats. Make a well in the centre.


Whisk banana, honey, oil, egg and yoghurt in a jug. Pour into well. Gently fold until just combined. Three-quarter fill muffin holes with mixture. Bake for 15 to 20 minutes or until a skewer inserted into the centre comes out clean. Stand for 5 minutes in pan. Turn onto a wire rack.


Sprinkle with toasted coconut. Serve warm.

Lime Cheesecake:





Ingredients (serves 12)


15 (120g) shredded wheatmeal biscuits


50g reduced-fat spread, melted


200g diet peach and mango yoghurt


250g reduced-fat smooth ricotta cheese


2 teaspoons finely grated lime rind


1 egg


2 tablespoons caster sugar


1/4 cup wholemeal plain flour


chopped fresh fruit, to serve





Method:


Preheat oven to 350掳F/320掳C fan-forced. Grease a 1 inch-deep, 9 inch (base) loose-based fluted tart pan. Process biscuits until they resemble fine breadcrumbs. Add spread. Process until combined. Press mixture over base of prepared pan. Place pan on a baking tray and refrigerate until required.


Using an electric mixer, beat yoghurt, ricotta, lime rind, egg, sugar and flour on low speed until smooth. Pour mixture over biscuit base. Bake for 30 minutes or until just set and edges are light golden. Remove from oven. Cool in pan. Cover and refrigerate overnight or until cold. Serve with chopped fruit.

Raspberry and Honey Semifreddo:





Ingredients (serves 8)


3 eggs


60ml (1/4 cup) honey


520g (2 cups) low-fat vanilla yoghurt


190g (1 1/2 cups) raspberries


1 x 250g punnet strawberries, washed, hulled, halved


2 tsp powdered sugar, sifted





Method:


Use an electric beater to beat together the eggs and honey for 5 minutes or until pale and creamy. Stir in the yoghurt.


Line the base and 2 long sides of a 1.5L (6-cup) capacity loaf pan with plastic wrap, allowing the sides to overhang. Pour in the egg mixture and fold over the plastic wrap to cover. Place in the freezer for 2 hours or until almost set.


Use a fork to mash 125g (1 cup) raspberries in a bowl. Swirl raspberry through the semifreddo. Cover and freeze overnight.


Transfer the semifreddo to the fridge 20 minutes before serving to soften slightly. Combine strawberries, icing sugar and remaining raspberries in a bowl. Turn semifreddo out onto a plate. Remove plastic wrap. Cut into slices and divide among serving plates. Top with the strawberry mixture to serve.

I make a super easy cheesecake topped with fruit.


Use mixer on low to blend 8 ounce pkg cream cheese with 8 ounce tub of sugar free Cool Whip. Spoon into ready made graham cracker crust. Refrigerate till firm. Top with fresh strawberries or canned sugar free cherry pie filling. Looks and tastes like you went to a lot of trouble but it's so quick %26amp; good too.
you can make anything you want just sub the sugar with a sugar free sweetner.
