Very simple and very delicious.





Banana Chocolate Tart





Crust: (or buy a pre-made graham cracker crust - regular or chocolate)


1-1/2 c graham cracker crumbs


5 tbs unsalted butter, cut into pieces


1/3 c plus 1-1/2 tbs sugar


1/8 tsp salt





1/2 c semisweet chocolate chips


1 c heavy cream


1-1/2 tbs dark rum


6 firm-ripe bananas


1/4 c apricot preserves





Preheat oven to 350掳F.





Blend crumbs, butter, 1/3 cup sugar, and salt in a food processor until mixture begins to hold together and pat onto bottom and up side of a 9-inch tart pan with a removable bottom. Bake in middle of oven until side of crust is firm to the touch, 14 to 18 minutes.





Sprinkle chocolate chips into hot crust and let stand 5 minutes to soften.


Spread evenly over bottom of crust.


Beat cream with remaining 1-1/2 tablespoons sugar and rum until it holds soft peaks.


Cut bananas into 1/4-inch-thick slices.


Whisk preserves and add bananas, tossing to coat.


Spoon banana mixture into crust and top with whipped cream.





***Do NOT make this ahead - you want to serve it warm, and you don't want the bananas to go brown.
This is my grandmother's recipe. I'm a grandfather now! So it has been tried and a true dessert.








BAKED BANANA PUDDING All Time Favorite!!!!


1 1/2 c. milk 4 ripe bananas


3/4 c. sugar 1/2 box vanilla wafers


1/2 c. water 2 egg whites


2 egg yolks 3 tbsp. sugar


4 - 5 tbsp. flour 1/8 tsp. cream of tartar


1 tsp. Vanilla


Combine 1 1/2 c. milk and 3/4 c. sugar in a medium sauce pan. Cook until it starts to boil, then add 1/2 c. water, 2 egg yolks, 4 to 5 tbsp. flour. When thickened, remove from heat and add 1 tsp. vanilla. To assemble, place a small amount of pudding








in bottom of a 2 1/2 quart casserole, add a layer of vanilla wafers and a layer of sliced bananas. Repeat with remaining


pudding, wafers, and bananas, ending with pudding on top.


Beat the egg whites until frothy. Add cream of tartar and 3 tbsp. of sugar. Beat until stiff peaks form. Spread meringue over top of pudding, sealing at edges, and bake at 375 degrees until lightly browned.

BANANA NUT BREAD


Have all ingredients at room temperature.





Whisk together thoroughly:


1 1/3 c. all-purpose flour


3/4 tsp. salt


1/2 tsp. baking soda


1/4 tsp. baking powder


In a large bowl, beat on high speed until lightened in color and texture, 2-3 minutes.


5 1/3 tbsp. unsalted butter


2/3 c. sugar


Beat in the flour mixture until blended and grainy. Gradually add:





2 large eggs, lightly beaten


Fold in until just combined:


1 c. mashed very ripe bananas


1/2 c. chopped walnuts or pecans


Put in a greased loaf pan. Spread out evenly. Bake until a toothpick inserted comes out clean, 50-60 minutes @ 350. Let cool 5-10 minutes before removing from the pan.

1 1/2 cups cold fat-free milk


1 (3.4 ounce) package instant vanilla pudding mix


1 (8 ounce) container frozen reduced-fat frozen whipped topping, thawed


18 cinnamon graham crackers squares


2 medium firm bananas, sliced











In a bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Fold in half of the whipped topping. Place nine graham cracker squares in an ungreased 8-in. square dish. Top with half of the pudding mixture and half of the banana slices. Repeat layers. Spread with remaining whipped topping. Cover and refrigerate for at least 1 hour before serving.
I made this yesterday and really enjoyed it!!





Frozen Peanut Butter and Banana Bars





Crust:


20 chocolate wafer cookies


2 t. melted butter





Filling:


4 oz. cream cheese softened


1/2 c. peanut butter


1 1/2 c. powdered sugar


1 c. heavy cream


4-5 bananas





1/2 c. chopped peanuts





Pulse cookies until fine. Mix with melted butter. Press into a 8'; square pan. Bake at 350 degrees for 10-15 minutes. Cool.





Combine cream cheese, peanut butter, sugar and cream in a bowl. Beat until smooth. Pour half of filling over crust. Peel bananas and slice in half lengthwise. Arrange flat side down over filling. Top with remaining filling. Sprinkle with nuts. Cover and freeze until firm ~6 hours.
I saw an episode of good eats about banana desserts. I tried the banana ice cream and it was great, and the banana foster looked good too. Heres the link, hope I could help.
