Cake/dessert recipes for a health-conscious person?

My health-conscious sister's birthday is coming up and I am on a quest for the perfect cake or dessert that is very low in sugars and fats.





Please respond; needed by August.

NO BAKE LITE CHEESECAKE





1 graham cracker crust


Sm. pkg. lemon pudding (sugar free)


1 1/2 c. canned skim milk (12 oz can)


8 oz. fat free cream cheese


8 oz. lite Cool Whip








Mix pudding and milk, then add cream cheese. Cream together. Add Cool Whip. Mix well and pour into pie crust. refrigerate for 2 hours.





Variation:


Use vanilla pudding top with sugar free cherry pie filling.

Ingredients


250g pitted dates, chopped


1 teaspoon bicarbonate of soda


1 1/2 cups boiling water


125g butter, softened


3/4 cup brown sugar


1 teaspoon vanilla extract


2 eggs, at room temperature


2 cups self-raising flour, sifted





Caramel sauce :


1 cup brown sugar


300ml thickened cream


1/2 teaspoon vanilla extract


60g butter, chopped





Method:


Preheat oven to 180掳C. Grease a 7cm deep, 22cm (base) cake pan and line base with baking paper.


Place dates and bicarbonate of soda in a heatproof bowl. Pour over boiling water. Allow to stand, uncovered, for 20 minutes or until dates are tender.


Using an electric mixer, beat butter, sugar and vanilla until pale and creamy. Add eggs, 1 at a time, beating well after each addition. Using a large metal spoon, stir in date mixture and flour. Mix until well combined.


Spoon mixture into cake pan. Bake for 40 to 45 minutes or until a skewer inserted into the centre comes out clean. Stand for 10 minutes before turning onto a wire rack.


Make caramel sauce: Combine sugar, cream, vanilla and butter in a saucepan over medium heat. Cook, stirring, for 3 minutes or until boiling. Reduce heat to low. Simmer for 2 minutes. Pour warm sauce over warm cake. Cut into wedges. Serve.
I am diabetic. My recipes are low carb/no sugar added but I don't have the nutritional info that goes with them because I haven't calculated it out.





Kitchen Sink Cookies





2 tbsp. unsalted butter, softened


2 tbsp. canola oil


1/3 c. light brown sugar (I use Splenda Brown Sugar Blend)


录 c. applesauce


1 egg white


1 tsp. vanilla


2/3 c. whole-wheat flour


陆 c. oatmeal


录 tsp. salt


录 tsp. ground cinnamon


录 c. pecans


陆 c. chocolate chips


cooking spray





Directions: Preheat oven to 375掳 F. Combine butter, oil, and brown sugar in the bowl of a mixer and mix on high speed, stopping occasionally to scrape down bowl, until mixture is light and fluffy, about 2 minutes. Add applesauce, egg white and vanilla and mix to combine. Add flour, oatmeal, salt, and cinnamon and mix until just combined. Add pecans and chocolate chips and mix to combine. Spray a baking sheet with cooking spray. Use 1 tbsp. cookie dough at a time, roll into balls and place 2 inches apart on baking sheet. Press cookies down with the palm of your hand or a fork and flatten slightly, as cookies will not spread as much as cookies with more butter. Bake for 12-14 minutes, or until lightly browned but still soft. Remove from oven and cool on racks.
I like the Angel food cake idea. Really simple if you go the boxed route or buy one premade. Then take some raspberries and puree them in a blender or food processor. Serve the cake with a scoop of lemon sorbet (find a recipe online or buy some) and drizzle with the puree (and garnish with a sprig of mint) for a light, refreshing, elegant, and fat-free summertime dessert.
get individual style parfait cups (they come in plastic), get non fat or low fat vanilla yogurt, place a dallop at the bottom of the cup, the put a layer of fresh fruit (bananas, mangos, strawberries, etc) then follow up by a layer of the yogurt, then put a layer of your favorite flavor of granola, then a layer of yogurt, etc. you get the idea.
I agree with the first poster - angel food cake is light, add fresh strawberries and light or fat free Cool Whip - Yum!

Does anybody have any really good apple dessert recipes?

My boss brought me about 30 pounds of apples this morning. I figure I really need to make something or I will never use all of these! I'm a good cook, but my family doesn't really care for cooked apples so I really don't make anything like that. Whatever I make, I want to make my boss some too, so it needs to be good - but not too difficult. I'm really hoping for recipes that have been tried and are loved - not just any old thing from a recipe site. That, I could do myself. THANKS!Does anybody have any really good apple dessert recipes?

Ingredients


Cooking Apples 4 lbs


Brown Sugar 8 oz.


Ground Cinnamon 2-4 tsp


Dried Cranberries 4 cups


Apple Juice 陆 cup


Butter or Margarine 1 lb, softened


Sugar 1 lb


Eggs 8 beaten


Ground Almonds 1 lb





1. Preheat oven to 350* F.


2. Peel, quarter, core, and slice apples


3. Put them in a sauce pan with the brown sugar, cinnamon, cranberries, and apple juice bring to a boil and simmer for 1 to 2 minutes.


4. Pour this mixture into a greased ovenproof dish, 3 inches deep, 9 inch diameter9 the dish needs to be deep to avoid fruit bubbling out during baking.)


5. Cream the butter until light and fluffy


6. Add the beaten eggs a little at the time and incorporate them well before adding more egg.


7. Fold in the ground almond.


8. Spoon the almond cake mix on top of the appl0cranberry mixture in the dish and even it out a little bit.


9. Put the dish in the oven and bake for 45-55 minutes.

















Small Batch Apple Cranberry Pudding

We like apple pancakes.This is my late mother-in-laws recipe.





1 1/4 c all purpose flour


2 1/2 t baking powder


3 T sugar


3/4 t salt


1/4 t cinnamon


1 egg, beaten


3/4 c milk


3 T melted butter


1 c chopped apples





Mix together dry ingredients. Add egg, milk, butter %26amp; apples. Fry on hot griddle.





She also made an apple salad.





Chopped apples(with skins), sliced bananas, mini marshmallows, mix with miracle whip %26amp; about a tablespoon of sugar. She had no ';real'; recipe for this, just as much of each as you like. The miracle whip was added so that it was about the same as a potato salad consistency.





You can always do apple sauce as well as fried apples.

cooking time: 40 minutes


Ingredients:


1/2 cup butter, softened


1 cup sugar


1 egg, beaten


2 apples, peeled,cored,chopped


1/2 cup chopped pecans


1 cup flour


1/2 teaspoon baking soda


1/2 teaspoon baking powder


1/2 teaspoon cinnamon


Preparation:


Cream butter and sugar, beat in egg, then mix in apples and pecans. Sift dry ingredients and work into the first mixture. Pour into a buttered, 8 x 8-inch baking dish and bake at 350 degrees 40 minutes.


Yields 12 to 16





apple cranberry crisp


Cooking time 55-60 minutes


Ingredients:


3 cups chopped tart apples


2 cups raw cranberries


1 cup granulated sugar


1/2 cup brown sugar


1 cup quick oats


1/2 cup chopped pecans or walnuts


1 stick of butter or margarine, cut in small pieces(4 ounces)


Preparation:


Spread applies %26amp; cranberries in bottom of a buttered 2-quart casserole dish. Spread sugars, oats and nuts over apples and cranberries.Top evenly with butter pieces. Bake for 55 to 65 minutes at 325掳.
This apple crisp recipe is very simple and tasty:





Peel %26amp; slice apples into a buttered pan





In a separate bowl mix together:


3/4 brown sugar


1/2 cup each flour, oats, margorine


1 teaspoon cinamon





Put the mixture on top of the sliced apples and bake in a 375 degree oven for 30 minutes.





Good with vanilla ice cream on the side!
buy one of those ready made crust-pillsbury, slice apples,put in a large pan, season with brown sugar, cinnamon, lemon juice, and toss until half cooked. let cool place in pie crust put in ovem 350 degrees for about 20 min. servce with vanilla ice cream





Applie fritters, slice apples dip in egg and flour put in very hot oiled pan and fry until golden brown, dip- vanilla yogurt.





baked apples, remove core, in the center hole drizzle in some brown sugar and honey, on the outside dizzle on honey to taste bake for 30-35 min.

Don't worry about making the homemade crust; use refrigerated crust from the grocery store. It works just as well and is much easier!

if you have a slow cooker, you can make apple butter which is fantastic





but if they don't like them cooked, there aren't really many options i can think of. i was going to suggest baked apples, which is just taking the core out the apple, stab it with a fork a few times, add cinnamon and brown sugar and nutmeg, then cover it it with pillsberry roll dough, sprinkle a little bit of brown sugar on the outside, and bake at 350





*edit: i should note that apple butter is really easy. you cut the apples, throw them in a slow cooker with a bit of apple cider vinegar (not even 1/3 cup), some sugar, cinnamon, sugar, nutmeg, etc. cook it on high for about 3 or 4 hours, then cook it on low overnight (8-9 hours i guess) . this pretty much makes apple sauce. then you take out the apples, mush them up (or use a blender), pour them back into the slow cooker for another 4 hours and you're done. you can season to taste. might want to get an official recipe if you need exact measurements. then i would offer the apple butter right back to my boss.

you can also make apple cider. or use the apples for really good chicken salad. or bury them and use it as an opportunity to teach your kids about how plants/trees grow.

Spicy Apple Twists





Ingredients


2 large baking apples, peeled, cored


1 1/2 cups Pillsbury BEST(R) All Purpose, Unbleached or Self Rising Flour*


1/2 teaspoon salt


1/2 cup shortening


4 tablespoons cold water, or as needed


1 tablespoon margarine or butter, softened


1/4 cup margarine or butter, melted


1/2 cup sugar


1 teaspoon cinnamon


1 cup water





Directions


Heat oven to 425 degrees F. Cut each apple into 8 wedges. Lightly spoon flour into measuring cup; level off. In medium bowl, blend flour and salt. With pastry blender or fork, cut in shortening until mixture resembles coarse crumbs. Sprinkle flour mixture with water 1 tablespoon at a time, mixing lightly with fork until dough is just moist enough to hold together. Shape dough into ball.


On floured surface, roll dough lightly from center to edge into 12-inch square. Spread with 1 tablespoon softened margarine. Fold 2 sides to center. Roll to 16x10-inch rectangle. Cut crosswise into 16 (10-inch) strips. Wrap 1 strip around each apple wedge. Place 1/2 inch apart in ungreased 13x9-inch pan.


Brush each wrapped apple wedge with melted margarine. In small bowl, blend sugar and cinnamon; sprinkle over wrapped apples.


Bake at 425 degrees F for 20 minutes. Pour water into pan. Bake an additional 12 to 17 minutes or until golden brown. Spoon sauce in pan over twists. Serve warm or cool, plain or with whipped cream.

Butter, for greasing pan


2 cups sugar


3 eggs


1 1/2 cups vegetable oil


1/4 cup orange juice


3 cups all-purpose flour


1 teaspoon baking soda


1/4 teaspoon salt


1 tablespoon ground cinnamon


1 tablespoon vanilla extract


3 cups peeled and finely chopped apples


1 cup shredded coconut


1 cup chopped pecans


Sauce:


1/2 cup (1 stick) butter


1 cup sugar


1/2 cup buttermilk


1/2 teaspoon baking soda

Preheat the oven to 325 degrees F. Generously grease a tube pan.





For the cake: in a large bowl, combine the sugar, eggs, oil, orange juice, flour, baking soda, salt, cinnamon and vanilla extract; and mix well. Fold apples, coconut, and pecans into batter.





Pour the batter into the prepared pan and bake until a tester comes out clean, about 1 1/2 hours.





Shortly before the cake is done, make the sauce: Melt the butter in a large saucepan, stir in the sugar, buttermilk, and baking soda, and bring to a good rolling boil, stirring constantly. Boil for 1 minute. Pour the sauce over the hot cake in the pan as soon as you remove it from the oven. Let stand 1 hour, then turn out onto a rack to cool completely.

Easy dessert recipes for a date?

Im looking to make something that anyone would like, since I don't know his tastes very well. Its our third date and I'm cooking dinner and bringing it to him (I have roomates)

1 cup of Sugar





1/3 cup of milk

In a large microwave-safe bowl melt Margarine. Stir in cocoa, sugar, and milk until blended well, Microwave on high for 2 minutes (mixture should boil). Make about 16 cookies

1 1/2 c White flour

Base, serve with Vanilla Ice Cream, HOME RUN!

SAUCY CHOCOLATE AND COFFEE ICE CREAM





CHOCOLATE SAUCE


185g dark chocolate, chopped


1/3 cup water


60g butter


1/2 cup icing sugar


1 tablespoon brandy





COFFEE ICE CREAM


3 eggs


2/3 cup Castor sugar


1 tablespoon instant coffee powder


1 tablespoon hot water


2 x 300ml cartons thickened cream, whipped





For chocolate sauce:


Combine chocolate water and butter in pan, stir over low heat without boiling until chocolate is melted.


Stir in icing sugar and brandy over heat.


Pour mixture into loaf tin, cover with foil, freeze several hours or overnight.





For coffee ice cream:





Combine eggs and sugar in pan, whisk constantly over low heat without boiling until frothy and slightly thickened.


Dissolve coffee in water, add to egg mixture, cool to room temperature.


Fold cream into coffee mixture.


Pour into loaf tin, cover with foil, freeze until almost set.


Remove coffee ice cream, beat with wooden spoon until soft.


Place some coffee ice cream over base of loaf tin, then top with alternate spoonfuls of coffee ice cream and frozen chocolate sauce until both mixtures have been used.


Freeze overnight covered with foil.


The chocolate sauce remains soft during the freezing which gives it a self saucing effect. Delicious!

This one is easy, but you have to make it and eat it right away. It won't travel. BANANAS FOSTER (for two)- In a frying pan, 1 tbsp Butter, 3 tbsp Brown sugar and two bananas sliced length wise and halved. Cook on moderate heat adding rum and a pinch of cinnamon until bananas soften and the sauce begins to thicken (Caramelize). Remove from heat and serve over Vanilla ice cream (in large red wine glasses is nice) and serve immediately.





Make it for your roommates a couple of times to get the hang of it before you make it for your guy.
Try whip cream very simple...
Ice cream topped with a liqueur like Godiva is delicious and doesn't get much easier.
Chocolate Pecan Pie





1 cup light corn syrup


3 each eggs


1/3 cup butter, melted


1 cup brown sugar


1 dash vanilla


1 pinch salt


2 cups pecans, pieces


1 each pie shell, uncooked


5 ounces milk chocolate, pieces





Preheat your oven to 350 degrees.





Combine the corn syrup, eggs and butter and whisk briskly. Add the brown sugar and mix well. Add vanilla, salt and pecans. Incorporate. Pour the mixture into the pie shell and drop in the chocolate pieces. Wrap a piece of foil around the edge of the pie to help keep the crust from over browning, and place in the oven on a small sheet pan for about one hour until the filling is set and the top is golden brown. Best served at room temperature or warmed slightly in the microwave. And a little Ice Cream on the side won't kill you either. Changed my mind, just leave the Ice cream Container here.
My favorite is...prepare instant chocolate pudding (as directed on the box)...Once you're done beating it, add a med siz tub of Cool Whip and mix just long enough to blend all of the Cool Whip thru the pudding. It makes a fluffy, delicious dessert...almost like chocolate mousse. You can top it with a strawberry and sprig of mint for a final touch

You need:


1 cake mix with pudding in the mix


1 can of lowfat evap. milk (not sweetened condensed)


1 can of pie filling





9';x13'; pan


non-stick spray


mixing bowl

Pre-heat oven according to cake mix directions. Spray pan well with non-stick spray. Mix cake mix %26amp; milk in mixing bowl until well blended (don't worry if it is a little lumpy). Pour into prepared pan. Spoon pie filling on top. Bake according to directions on cake mix. Can be topped with ice cream or whipped cream, good served warm or cold.

2. Sift together flour and 1/2 cup of the granulated sugar; sift again and set aside.





3. In large bowl of an electric mixer, beat egg whites on high speed until foamy. Add salt and cream of tartar and continue beating until mixture holds soft peaks. Add remaining sugar, 2 tablespoons at a time, beating well after each addition, until mixture holds stiff, glossy peaks.





4. With a rubber spatula fold in vanilla. Sprinkle in flour mixture, about 1/4 cup at time, gently folding in each addition just until blended. Turn batter into an ungreased 10-inch tube pan with a removable bottom; gently smooth top. Slide spatula down outside edge of batter and run around pan to eliminate large air bubbles.





5. Bake in 375掳F oven until cake is golden and springs back when lightly pressed (about 35 minutes). Invert pan on a funnel or pop bottle to keep cake from shrinking; let cool completely. Remove from pan and place on a cake plate or platter. Dust with powdered sugar and decorate with strawberries, if desired. Slice with an angel food cake knife or serrated knife.

Spiced Bread Pudding





Makes 8 squares


Wholemeal bread - 300g (11 oz) cut into 2.5 cm (1 inch) chunks


Milk - 300 ml (陆 pint)


Egg - 1, beaten


Butter - 75g (3 oz), softened


Raisins - 110g (4 oz)


Other dried fruit - 50g (2 oz), e.g. blueberries, cherries, cranberries, chopped


apricots


Brown sugar - 110g (4 oz)


Ground cinnamon - 1 tbsp


Grated nutmeg - 1 tbsp


METHOD


Preheat oven to 190 掳C / 375 掳F / Gas 5.





In a large bowl, mix the bread and milk. Leave to soak for 5 minutes.





Add the remaining ingredients and mix well. Press into a greased oblong


sandwich tin, approx. 23 cm x 20 cm (9 x 8 inch).





Bake for 35-40 minutes. Leave in the tin to cool, then turn out and cut into


squares.





Store in the fridge in an airtight container or in foil and eat within 2 days.
You're gonna need a killer dessert if you are bringing him meatloaf! Since you're making meatloaf, you'll obviously need something simple... bring green jello.
Nice course desert probably 1 cup of ice-cream I mean u know that's nice stawberry with a cherry on top

    Panna Cotta:





    INGREDIENTS


    1/3 cup skim milk


    1 (.25 ounce) envelope unflavored gelatin


    2 1/2 cups heavy cream


    1/2 cup white sugar


    1 1/2 teaspoons vanilla extract








    DIRECTIONS


    Pour milk into a small bowl, and stir in the gelatin powder. Set aside.


    In a saucepan, stir together the heavy cream and sugar, and set over medium heat. Bring to a full boil, watching carefully, as the cream will quickly rise to the top of the pan. Pour the gelatin and milk into the cream, stirring until completely dissolved. Cook for one minute, stirring constantly. Remove from heat, stir in the vanilla and pour into six individual ramekin dishes.


    Cool the ramekins uncovered at room temperature. When cool, cover with plastic wrap, and refrigerate for at least 4 hours, but preferably overnight before serving.

    7 ounces chocolate pudding (not instant)


    2 eggs


    2 陆 cups of chocolate chips or chopped chocolate bars





    Start by making the pudding following the directions on the package.





    Then combine the cake mix, pudding, and eggs. Mix until batter is uniform. Stir half of the chocolate chips in.

    Cake Mix


    1/2 Cup Vegetable Oil


    2 Eggs





    Preheat oven to 350F





    Mix 2 eggs and 1/2 cup oil with your favorite box cake mix. You may also add another hand full of nuts, raisens, or chocolate chips if you like.





    Drop dough onto a non stick cookie sheet, spacing them about 2 inches apart.





    Bake for 8 to 10 minutes. Let cool before serving.

    For Lunch time grilled cheese sandwiches are a must or Mac and cheese. and for breakfest you can make egg and cheese sandwiches or you can make fun pancakes which can be mini size with fruit on top. Theres allot of thing you can do to make them easy, but with kids you always have to make things fun and colorful!
    I saw this at a day care. Take one small package of Jello and pour it into a bowl. Dip banana chunks in it and eat. They used strawberry Jello and it smelled so good. Another very easy one is to mix one tub of Cool Whip with one can of cherry pie filling and mix, you can add chopped nuts if you like. A similar recipe is to mix one tub of Cool Whip with a can of well-drained pineapple and some flaked coconut. You can make a sweet fruit salad using a small container of any fruit yogurt and some chopped fruits such as bananas, grape halves, apples, etc.

    1 1/4 lbs. silken tofu


    3/4 cup semi- sweet chocolate chips melted





    Puree the tofu until it is smooth. Add the melted chocolate and blend thoroughly. Pour into seven dessert bowls. Refrigerate overnight.





    If u think that u dont have the time to melt chocolate chips, try it with chocolate syrup.

    MethodPour 1/4 pint of milk into saucepan, add marg and heat till nearly boiling.

    Lemon Raspberry White Chocolate Mousse Cake





    Ingredients:





    1 (18.25 ounce) package lemon cake mix


    1 (10 ounce) package frozen raspberries


    2 tablespoons cornstarch


    8 (1 ounce) squares white chocolate, chopped


    3 cups heavy cream


    1 teaspoon vanilla extract


    1/2 cup fresh raspberries, garnish








    Directions:





    Prepare and bake cake mix according to package directions for two 9 inch round pans. Cool cakes completely, then split each in half to make 4 layers.





    To make Raspberry Filling: In a blender or food processor, puree raspberries. In a saucepan, heat pureed raspberries until boiling. Mix cornstarch with a small amount of water and stir into raspberries. cook, stirring constantly, for 5 minutes, or until thickened. Set aside to cool.





    To make White Chocolate Mousse: In the top of a double boiler, heat white chocolate with 1 cup of the cream, stirring occasionally, until chocolate is melted and smooth. Remove from heat and allow to cool to lukewarm. Whip the remaining 2 cups cream until soft peaks form. Stir in the vanilla. Fold 1/3 of the whipped cream into the white chocolate mixture, then quickly fold in the remaining whipped cream. Do not over-mix, or the mousse will become grainy.





    Place 1 cake layer on serving plate and spread with white chocolate mousse. Place the next layer on top and spread with raspberry filling. Repeat next layer of cake with mousse.


    Cover with the final layer of cake. Frost top and sides with mousse. Pipe a border with remaining mousse. Garnish with fresh berries.

    1 1/2 c. flour


    2 c. sugar


    8 T. cocoa


    1 tsp. salt


    1 c. soft shortening or 1 stick softened margarine and 1/2 c. shortening

    Combine all ingredients; stir until smooth. Spread dough in greased 9';x13'; pan and bake at 350 degrees for 30 minutes.








    Fudge Frosting:


    1 c. sugar

    1/4 c. cream or whole milk


    1 1/2 T. butter





    Combine all ingredients in pan and bring to a rolling boil. Stir constantly and cook for 2 minutes. Remove from heat and beat until mixture just starts to thicken.     Lemon and Lime Refrigerator Cake


    finely grated zest and juice of 1 large lemon

    4 digestive biscuits, crushed to crumbs


    1 oz (25 g) Grape-Nuts cereal


    2 level tablespoons soft brown sugar


    1 oz (25 g) butter, melted


    3 large eggs, separated


    2陆 oz (60 g) caster sugar


    1 level tablespoon powdered gelatine


    录 pint (150 ml) double cream





    You will also need a 2 lb (900 g) loaf tin with a base measurement of 7录 x 3陆 inches (18.5 x 9 cm) and a depth of 4陆 inches (11.5 cm), brushed lightly with a tasteless oil, such as groundnut oil.








    In a small basin, combine the biscuit crumbs with the Grape-Nuts and brown sugar, then pour in the melted butter and mix thoroughly. Sprinkle a third of this mixture over the base of the loaf tin. Now put the egg yolks, grated zests and strained lemon and lime juice into a bowl, and add the caster sugar and gelatine, too. Then place the bowl over a pan of barely simmering water and whisk using an electric hand whisk for about 10 minutes or until the mixture thickens. Then remove the bowl from the heat and whisk again for a further 7-8 minutes until the mixture cools.





    Now clean and dry the whisk thoroughly and first beat the egg whites till stiff, then beat the cream until floppy but not too thick. Next, take a metal spoon and carefully fold the egg whites first and then the cream into the lemon-and-lime mixture. Now pour it into the tin, sprinkle the remaining crumbs over the top, cover with kitchen foil and transfer it to the freezer and freeze overnight.





    Three hours before serving transfer the tin to the main body of the fridge, then turn it out on to a serving dish and serve cut into slices. If you have any left over, there is no need to re-freeze it; just leave it in the fridge where it will become more like a mousse.

    150g/5录oz crushed digestive biscuits


    2 tbsp melted butter

    Method


    1. For the biscuit layer, mix all the biscuit ingredients together and reserve.


    2. For the strawberry layer, place the lemon juice and water into a small saucepan and mix in the cornflour well.


    3. Bring to the boil and when the cornflour is dissolved, mix in the sugar and the strawberries.


    4. Heat gently to dissolve the sugar. Remove from the heat, and allow to cool and thicken.


    5. For the cheesecake mixture, soften the gelatine in the lemon juice and a spoonful of water if needed, for 3-5 minutes.


    6. Heat the mixture gently over a low heat in a small saucepan until the gelatine is completely dissolved.


    7. Meanwhile whisk the cream cheese and the sugar in a mixer or blender on medium speed.


    8. When the sugar is dissolved turn down the speed and add the yoghurt and the gelatine.


    9. When the mixture is blended together add the vanilla extract.


    10. To assemble, place the biscuit layer into the base of six wine glasses, add a good dollop of cheesecake mixture, then add some strawberries. Chill the mixture for a few hours and top with whipped cream and a sprig of mint. Serve immediately.

    For the fresh lemon curd:


    grated zest and juice 2 large, juicy lemons


    6 oz (175 g) golden caster sugar


    2 large eggs


    4 oz (110 g) unsalted butter





    For the sponge puddings:


    6 oz (175 g) self-raising flour


    1 rounded teaspoon baking powder


    6 oz (175 g) softened butter


    3 large eggs


    6 oz (175 g) golden caster sugar


    grated zest 1 lemon and 1 tablespoon lemon juice


    butter, for greasing





    For the lemon sauce:


    the remainder of the lemon curd


    5 fl oz (150 ml) double cream





    You will also need eight 6 fl oz (175 ml) pudding basins and two steamers, foil and silicone paper (baking parchment).





    First of all make the lemon curd. What you need to do is place the grated lemon zest and sugar in a bowl and then in another bowl whisk the lemon juice together with the eggs and then pour this mixture over the sugar. Now add the butter cut into little pieces, and place the bowl over a pan of barely simmering water. You need to keep stirring frequently until thickened, which will take roughly 20 minutes. If you want to make this ahead, you can store it in a clean dry jar with a screw-top lid, but it is best eaten within a week.





    Now for the puddings. First of all butter the basins well and place a piece of buttered silicone paper in the bottom of each basin. Then take a large mixing bowl and sift the flour and baking powder into it, holding the sieve high to give the flour a good airing, add the softened butter, eggs, sugar, lemon zest and juice. Then, using an electric hand whisk, beat the mixture for about 2 minutes until it is thoroughly blended.





    After that, fill the bottom of each basin with 1 dessertspoon of lemon curd and then follow this with the sponge mixture, dividing it equally between the eight pudding basins. Level the tops, then place a piece of foil over each one, making a pleat in the centre.





    Now place the puddings in a steamer fitted over a saucepan of boiling water and steam them for about 25 minutes or until the centre springs back when pressed. While the puddings are cooking you can make the lemon sauce. All you do is place the remaining lemon curd in a saucepan. Add 5 fl oz (150 ml) hot water and the double cream and then heat very gently, stirring all the time until hot but not bubbling. When the puddings are cooked turn them out on to warmed serving plates and hand the sauce round separately

    1. Combine all the ingredients together in a bowl.

    3 level tablespoons Morello cherry preserve or another preserve





    Pre-heat the oven to gas mark 4, 350掳F (180掳C).





    First pour the milk into a saucepan and bring to the boil. Remove from the heat and stir in the butter, breadcrumbs, 1 oz (25 g) sugar and the lemon zest and leave for 20 minutes to allow the breadcrumbs to swell.





    Now separate the eggs. Put the whites into a large, grease-free bowl and the yolks into a small bowl. Then beat the yolks and add them to the cooled breadcrumb mixture, after that divide it between the individual dishes, smoothing the tops. Now place the tray in the centre of the oven and bake for about 25 minutes until set.





    Meanwhile, in a small saucepan melt the preserve over a low heat and, when the puddings are ready, remove them from the oven and spread it carefully and evenly all over the tops.





    Next use a clean, dry whisk to beat the egg whites to the stiff-peak stage, then whisk in 1陆 oz (40 g) caster sugar and then divide this meringue mixture between each pudding, piling it up into high peaks. Finally, sprinkle a teaspoon of caster sugar over the tops of the puddings and bake for a further 10-15 minutes on the centre shelf again until the tops are golden brown.





    Don't worry if they're ready before you've finished the main course; they won't mind waiting in a warm place.
    This is the most wonderful and amazingly simple recipe I have ever made for partys. Its also healthy, though you can't tell by the taste.





    16 ounces cream cheese


    16 ounces whipped cream cheese


    3/4 c. sugar


    2 eggs


    1 egg white


    2 tsp. vanilla


    1 c. fat free sourcream


    1tbls cornstarch


    50 grams pure whey protein powder (5 tbls)





    Preheat oven to 325*. Lightly grease and flour and a 9 inch spring


    form pan, you can use a bigger pan also. In a large mixing bowl, beat


    togeather cream cheeseand suger until light. Add eggs and egg white.


    Beat thoroughly after each. Blend in vanilla and sour cream. Add


    cornstarchand why protein powder and mix well. Pour the mixture onto


    the pan after you have prepared the crust in put it in the pan. Place


    a pan with 1 inch of hot water on the bottom oven rack. Bake 325* for


    45 minutes on the center rack. it is recommended that you use a timer.


    Turn off oven without opening the door and let cool for an hour. Let


    cool thoroughly before unmolding. It's normal for cake to crack


    slightly.





    CRUST:





    1 3/4 c. finely chopped graham crackers


    1/4 c. finely chopped walnuts


    1/2 tsp ground cinnamon


    6 tbls olive oil





    Spread crust in the bottom of pan, pack it in and then put cheese cake


    mixture into it.
    Very easy and delicious.





    OREO BALLS





    Ingredients:


    1 package Oreo cookies, crushed


    8 ounces cream cheese, softened


    1 package white almond bark


    1 package chocolate almond bark





    Preparation:


    Using a blender or hand held mixer, mix Oreos and cream cheese together. Roll into walnut size balls. Chill for an hour. Melt approximately 3/4 package of both types of almond bark. Stick a toothpick in an Oreo ball and dip it in the melted almond bark. Allow to harden on wax paper. Takes about 15 min. When Oreo balls are no longer sticky to the touch, decorate with drizzles of the other type of almond bark.

    QUICK BRIGADIERS





    Ingredients:


    3 tbsp of powder cocoa


    granulated chocolate (if you can't find this replace it by cocoa, or powder chocolate)


    1 can of condensed milk


    1 tbsp of butter





    Preparation:


    Melt the butter. Add all ingredients except the granulated chocolate inside a microwave bowl and stir very well. Take it to the microwave, in full power 2 minutes open it and stir the mixture vigorously. Repeat this procedure 3 to 4 times. At the end remove the bowl from the microwave, let it completely cool off and make small balls with your hands (dip your hands in water, it will be easier to make the balls). Cover each ball with granulated chocolate or cocoa. Chill these balls in the fridge until it's time to serve them.

    PINE BARK





    35 saltine crackers (2'; X 2'; squares, not big squares)


    1 cup butter


    1 cup packed light brown sugar


    1/2 teaspoon almond extract


    5 (4-ounce) milk chocolate bars, broken into pieces





    Preheat oven to 400 degrees F.





    Line a 15 by 10 by 1-inch jelly roll pan with tin foil. Lightly spray foil with a non-stick cooking spray.





    Place saltine crackers, salty side up, in prepared pan. In a saucepan, boil butter and sugar for 2 to 3 minutes, stirring constantly. Remove from heat and stir in almond extract. Pour mixture over crackers and bake for 4 to 6 minutes. Remove from oven, top with candy bars, and spread evenly as chocolate begins to melt. Cool slightly and transfer onto waxed paper. Allow to cool completely. Break into squares and serve on a pretty party platter.





    Before the chocolate has set, you can sprinkle on chopped nuts, multicoloured candy sprinkles, or festive edible ';glitter';. Have fun!!

    This looks really fancy - but is really easy.





    Buy some ready made sweet pie shells - or if you can be bothered, make some sweet shortbread pie shell to fill the base of a brownie tray or pie dish.





    Mix a vanilla instant pudding with cream instead of milk, pour it over the shell and let it set in the fridge.





    Decorate the top with canned apricot halves, fresh strawberries cut in half, kiwi fruit slices, pineapple pieces. Lay them touching each other in a nice pattern.





    In a bowl, put about 3 big tablespoons of apricot jelly and 1 tablespoon water. Melt in the microwave for 1 minute.





    Using a pastry brush or the back of a teaspoon, spread over the top of the fruit.





    Place in the fridge so the jelly glaze can set. Honestly, this looks AMAZING and tastes SO GOOD. I have made giant ones in a huge baking tray and I have also made mini individual ones.





    Everyone will think you are incredible!

    INGREDIENTS:





    12 oz. pkg. semisweet chocolate chips


    14 oz. can sweetened condensed milk





    DIRECTIONS:


    1. Place chips and milk in microwave safe bowl.





    2. Microwave on medium power for 2-3 minutes, stirring after every minute.





    3. Microwave, stirring at 1 minutes intervals, until chips are melted and mixture is smooth and thick.

    40 JET-PUFFED Marshmallows


    4 cups POST Cocoa PEBBLES Cereal


    15 CHIPS AHOY! Real Chocolate Chip Cookies, coarsely chopped











    MELT butter in large saucepan on low heat. Add marshmallows; stir until marshmallows are completely melted and mixture is well blended. Remove from heat.


    ADD cereal and chopped cookies; mix well. Press firmly into greased 13x9-inch pan. Cool completely.


    CUT into 32 bars to serve.
    It doesn't get simpler than this...





    Half a large loaf of bread


    Dried fruit (currants)


    spices - cinnamon, nutmeg, ginger








    Put bread in large bowl just cover with water. Leave 10 minutes.


    After 10 minutes lightly press bread, pour excess water away.


    Add dried fruit - (I use just currants) enough to get at least a polka dot effect.


    Add half a teaspoon each (or to taste) of cinnamon, ginger, and nutmeg. Mix thoroughly.


    Place in large shallowish tin and bake at 180 degrees until top goes dark golden brown - about 30 mins.





    Serve hot with custard on a cold day OR allow to cool and place in fridge to eat by itself on a warm day.

    Ingredients:


    1 (15 ounce) can pumpkin puree


    1 (12 ounce) can evaporated milk


    1 cup sugar


    3 eggs

    Bake at 350F for 45 - 50 minutes. Check for doneness by inserting a table knife in the center. If the knife comes out clean, it is done.Do you guys know any delicious dessert recipes?
    My friend makes these all the time and they are always a hit:





    Chocolate Cake Balls:


    Cook a chocolate cake according to the box directions.


    While cake is still warm, crumble into tiny pieces. (A food processor works great)


    Mix (by hand) the cake crumbles with ¼- ½ of a container of butter cream or chocolate frosting (until the “batter” is mixed throughout without any dry cake particles, should be like a wet dough)


    Roll the ';batter'; into 1 – 1½ inch balls


    Refrigerated for about 3 hours (or freeze for at least 30 minutes)


    Dip the balls into melted milk chocolate


    Drizzle with white chocolate (optional)


    Refrigerate for an additional 30 minutes (optional)


    Tips:


    *Mix it up and try different cake/frosting combinations


    *Use a toothpick to dip the balls into chocolate. When cooled, dip just the top in to cover the mark left by the toothpick.


    *Take double boiler off of heat when dipping.


    *Use chocolate used for candy making or bark chocolate (Don't use chocolate chips, they get ';gummy'; when balls are left out)


    *After balls have been chilled, they don't have to stay in the refrigerator

    Lamb chops on the BBQ. Prawns and scallops on the BBQ are nice too. If you are going to have sausages please make sure you use gourmet sausages. That way you are getting REAL meat and not a bunch of cereal fillers and processed meat. Pavlova with heaps of fresh fruit on top is a traditional Aussie dessert.

    For desserts, look up how to make pavlova. It's a meringue base with a variety of fruits on top. Also, lamingtons are quite good. They are a yellow cake covered in chocolate and coconut flake.

    Ingredients:





    1 Sara lee pound cake (10 3/4oz.)


    16 oz Non-dairy whipped topping;


    1/4 c Strong-brewed coffee


    1/2 c Sweetened cocoa powder





    Instructions:





    Cut pound cake vertically into 10 equal-size slices.


    Drizzle coffee over each slice; set aside.


    In a large bowl, combine whipped topping and 1/4 cup cocoa, mixing until blended.


    Place 5 cake slices on a flat surface.


    Evenly spread a thick layer of whipped topping mixture over each slice.


    Top each with a second cake slice, sandwich-style.


    Transfer to individual dessert plates.


    Spread each cake ';sandwich'; with whipped topping mixture.


    Cut ';sandwiches'; diagonally in half.


    Sprinkle with remaining cocoa; serve immediately.











    GOOEY CAKE


    INGREDIENTS %26amp; DIRECTIONS:





    Mix together thoroughly:


    1 box yellow cake mix


    2 eggs


    2 sticks melted butter


    Pour into a (DEEP) lightly greased 9 x 13 baking pan

    8oz. package cream cheese

    CHOCOLATE ECLAIR CAKE


    (NO BAKE)





    INGREDIENTS:





    1 large package Vanilla instant pudding


    1 small package Vanilla instant pudding


    3 1/2 cups milk


    1 8oz. container Cool Whip


    1 box Honey Graham Crackers





    DIRECTIONS:





    1.) Mix together and beat for 3 minutes on low speed, vanilla pudding and milk.


    2.) Fold in Cool Whip.


    3.) Line a 9 x 13 baking pan with 1 layer of graham crackers, pour 1/2 pudding mixture over crackers.


    4.) Make a second layer of crackers and pour remaining pudding over crackers.


    5.) Make a 3rd layer of crackers over pudding.


    6.) Prepare Topping.





    Topping





    Beat until smooth with mixer:





    6 Tablespoons cocoa


    2 Tablespoons cooking oil


    2 Tablespoons softened margarine


    2 teaspoons white Karo syrup


    2 Tablespoons milk


    1 1/2 cups sifted powdered sugar


    1 teaspoon vanilla








    Spread evenly over chilled cake. Refrigerate overnight before serving..











    Mock Ice Cream Sandwiches





    2 whole graham crackers


    Cool Whip





    Spread a thin layer of Cool Whip on 1 whole cracker鈥?top with remaining cracker鈥?freeze.


    Can't get any simpler that that!!


    You'll want to make several at a time.....can't eat just one!





    HINT: Melt some chocolate and drizzle over top before freezing.














    CAKE MIX COOKIES


    (I make these at Christmastime for gift giving)





    White Cake Mix


    2 Tablespoons water


    2 eggs


    1/2 cup cooking oil


    1 teaspoon almond extract


    1/2 cup chopped nuts


    powdered sugar





    Mix all ingredients, except powdered sugar.





    Drop batter (about a teaspoon per cookie) into a bowl of powdered sugar.





    Roll in sugar until it is an approximate shape of a ball.





    Place ion a lightly greased cookie sheet.





    Bake at 350 degrees about 18 minutes, until lightly browned.





    Cool on wire racks. Makes about 4 dozen cookies.





    (Use any flavoring or cake mix you desire.)














    Kreamy Kool-Aid Pie





    1-(6 g) package un sweetened Kool-Aid powdered drink mix


    1-(14 oz.)can sweetened condensed milk


    1-(8 oz)container Cool Whip frozen whipped topping, thawed.


    1-(9 inch) Graham Cracker Pie Crust (or Cookie crust)


    Cool Whip for top (optional)





    1. In a medium bowl mix Kool-Aid and condensed milk, thoroughly.


    2. Fold in Cool Whip.


    4. If desired, spread more Cool Whip on top.


    5. Chill for a minimum of 4 hours.





    I鈥檝e used: Strawberry鈥herry鈥emon-lime (Key-Lime Pie)鈥?Lemonade (Lemon Pie鈥ight add some yellow food coloring for a more lemony look.)








    ROBERT REDFORD DESSERT





    INGREDIENTS %26amp; INSTRUCTIONS FOR BOTTOM LAYER:


    Melt 1 stick butter


    Add 1/2 cup nuts and 1 cup flour.





    Press into bottom of lightly greased 9 x 13 baking pan. Bake 20 minutes at 350 degrees.





    MIDDLE LAYER:


    Blend together 1 8oz. package cream cheese and 1 cup sugar. Fold in 1/2 small tub Cool Whip. Mix well.





    TOP LAYER:


    Mix together until mixture begins to thicken:


    1 large package vanilla instant pudding %26amp; 1 large package instant chocolate pudding with 3 cups milk.





    Spread on middle layer and chill to set. Spread remaining cool whip on top %26amp; garnish with nuts %26amp; grated chocolate if desired.








    DIRT PUDDING





    INGREDIENTS:


    1 pound bag of Oreo鈥檚


    1 large box of instant vanilla pudding


    1 small container of Cool Whip


    1 Tablespoon powdered sugar





    INSTRUCTIONS:


    1.) Crush 3/4 bag of Oreo鈥檚 and spread in 9 x 13 baking dish.


    2.) Make pudding as directed on package.


    3.) Add Cool Whip %26amp; sugar, spread over crushed Oreo鈥檚.


    4.) Crush remaining Oreo鈥檚 and sprinkle on top of pudding mixture. Refrigerate.











    Banana Pudding





    I usually double the recipe....never any left-overs.





    Ingredients:


    Bananas


    Use instant Banana pudding or vanilla pudding fix by directions on box.


    Cool Whip...add to pudding mix thoroughly.


    Vanilla wafers


    Toasted coconut.





    Line serving dish with a layer of vanilla wafers (a row up the sides of dish, also.)


    Add a layer of sliced of bananas


    Gently cover with a layer of 1/2 pudding mixture.


    Make a second layer of wafers, bananas %26amp; pudding.





    Top with some toasted coconut and/or crushed vanilla wafers.

    *1 package (3 ounces) lady fingers (12 ladyfingers)


    *1/2 cup cold prepared espresso


    *2 teaspoons baking cocoa


    *Cherries with stems (if desired)


    Directions:


    _1.pour whipping cream into a medium bowl, %26amp; place in fridge to chill. the cream will whip better in a cold fridge.


    _2.beat the cream cheese %26amp; powdered sugar in another medium bowl w/ the electric mixer on medium speed until smooth. Beat the rum on low speed, %26amp; set aside.


    _3.beat the whipping cream on highe speed until stiff peaks form. Gently sppon the whipped cream onto the cream cheese mixer. To fold together; use a rubber spatula to cut down vertically through the mixtures, then slide the spatula across the bottom of the bowl %26amp; up the side, turning the mixtures over.Rotate the bowl 1/4 turn, %26amp; repeat this down-across-up motion.Continue mixing in this way just until ingredients are blended.


    _4.Split each ladyfinger horzontally in half. Arrange halfof them, cut sides up, over the bottom of the ungreased pan. Drizzle 1/4 cup of the cold espresso over the ladyfingers. Spread half of the cream cheese mixture over ladyfingers.


    _5.Arrange the remaining ladyfingers,cuts sides up, over the cream cheese mixture. Drizzle the remaining cup of cold espresso, %26amp; spread the remaining cream cheese mixture.


    _6.Sprinkle the cocoa over the top of the dessert. If you have a small strainer, place the cocoain the strainer %26amp; shake it over the dessert. Otherwise. Shake the cocoa from a spoon. Cover %26amp; refrigerate for about 4 hours. If you want to, you can garnish each serving with a cherry.

    2 pints strawberries, sliced


    1/4 cup white sugar


    1 (12 ounce) container frozen whipped topping, thawed


    2 tablespoons chocolate syrup


    Preheat oven 400


    Grease two 9 inch layer pans.


    In a large mixing bowl, combine flour, 1/3 cup sugar, cocoa, baking powder, baking soda, and salt. Cut in butter or margarine until the mixture resembles coarse crumbs. Add milk, mixing until just moistened. Spread batter evenly into two prepared layer pans.


    Bake at 400 degrees F (200 degrees C) for 15 minutes, or until a toothpick inserted in the center comes out clean. Cool.


    In a medium-size mixing bowl, combine strawberries and 1/4 cup sugar. Let the mixture stand 10 minutes.


    Cover the bottom shortcake layer with half of strawberry mixture and half of the whipped topping. Top with second shortcake layer, remaining strawberry mixture and whipped topping. Drizzle with chocolate topping.

    Orange Sugared Scones


    Mixing: Creaming Method











    2陆 C all-purpose flour


    2 tsp baking powder


    陆 tsp baking soda


    陆 tsp salt


    陆 tsp cinnamon


    陆 C butter, chilled


    陆 cup currants or raisins


    1 tbsp grated orange peel


    1 C sour cream


    1 egg, separated


    4 tsp lemon juice


    2 tbsp sugar


    Heat oven to 375掳 and bake 25 to 30 minutes or until lightly browned.


    In large bowl combine, flour, baking powder, baking soda, salt and cinnamon


    Cut in butter until crumbly


    In small bowl combine 陆 cup sugar, currants and orange peel. Stir into flour mixture.


    In medium bowl, with wire whisk, stir together sour cream, egg yolk and lemon juice until smooth.


    Stir sour cream mixture into flour mixture (mixture will be dry)


    Knead about 5 to 8 times to combine all ingredients


    Divide dough in half. PAT each half into 6 inch circle


    Place both 6 inch circles on a greased cookie sheet


    Cut each circle into 6 wedges. IN a small bowl beat egg white with fork until frothy.


    Brush tops of scones with egg whites and sprinkle with 2 tbsp of sugar.

    butter flavored cooking spray


    2 cups cinnamon sugar





    In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves.





    Cover and chill in the refrigerator at least 15 minutes.





    Preheat oven to 350 degrees F (175 degrees C).





    Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.





    Bake in the preheated oven 8 to 10 minutes.





    Repeat with any remaining tortilla wedges.

    First off search the veggie section and you'll find LOTS of recipes that don't use egg and lots of ways to replace eggs! I've left links to the Ener-G company that makes egg replacer and two sites that have vegan recipes (vegans *never* use egg).





    If you have a *specific* question about how to make a particular cake/dessert or anything without egg you are *MORE* than welcome to ask in the vegetarian section but I'll warn you that we see your exact question in there several times a month and most are sick of it%26lt;g%26gt;.

    3/4 cup cocoa

    Sift dry ingredients together.





    Beat in other ingredients and mix til smooth.





    Bake in 9 x 12'; greased and floured pan 375 degees F oven for 30 minutes.





    Frost with favorite of choice.

    Here are a couple I found that sound pretty good:





    Chocolate Cake








    Ingredients:





    1-1/2 cup flour


    1/3 cup cocoa powder


    1 tsp baking soda


    1/2 tsp salt


    1 cup sugar


    1/2 cup vegetable oil


    1 cup cold water (or ice coffee)


    2 tsp vanilla extract


    2 tsp vinegar





    Preparation:





    Preheat oven to 375掳F (190掳C). Use a small brownie size pan (no greasing required). Mix all the dry ingredients right in pan. Mix all the wet ingredients in separate bowl except the vinegar (important!). Add wet ingredients to dry and stir until all dry ingredients are mixed. Add the vinegar quickly and stir in 鈥?immediately put the pan in the oven and bake for 25 to 30 min. Cool thoroughly.





    Optional: after you add the vinegar, you can put some frozen cherries, raspberries or cranberries on top of the batter (or you can mix them in beforehand)





    Applesauce Spice Cake





    Ingredients:





    1/2 cup molasses


    1 cup applesauce


    1 tsp cinnamon


    1/2 tsp cloves


    1 tsp baking powder


    1/2 tsp baking soda


    1-3/4 cup flour (whole wheat pastry flour is good)


    2 tsp ginger (optional)





    Preparation:





    Combine the molasses and applesauce in a large bowl. Combine remaining ingredients and stir into the liquid. (If the batter seems very dry, add a little more applesauce or a little water.) Bake in a nonstick 8 x 8-inch baking pan or one sprayed with a non-stick spray, in a 350掳 F (175掳C) oven, for 30 to 45 minutes, or until it tests done.





    The optional ginger makes an acceptable gingerbread. You can also leave out the ginger and add 3 or 4 tablespoons of cocoa to make a tasty but not very sweet or rich chocolate cake.

    Grandma's Waffle Iron Cookies are a holiday favorite in my family. Makes about 5-6 dozen cookies. One note, this recipe will not work with a Belgian waffle iron (the kind that makes the really big holes in the waffles) you need a standard waffle iron.





    Ingredients for cookies


    4 squares semi-sweet bakers chocolate


    2 sticks plus 2 tbsp margarine


    1 1/2 c sugar


    4 eggs


    2 c flour


    1/2 tsp salt





    Ingredients for frosting


    1/4 c margarine


    1/3 c milk


    1 tsp vanilla


    2 squares semi-sweet bakers chocolate


    2 1/2 c powdered sugar


    M%26amp;Ms for decoration - we usually put two green and one red on each cookie to kind of look like holly.





    Directions for cookies


    Melt chocolate and margarine together in a small pan, stirring continuously. In a bowl combine sugar and eggs and mix bowl. Add chocolate mixture and stir well. Add flour and salt and stir well. Cook in waffle iron at medium low/light waffle setting. If the waffle iron does not have settings you will have to keep unplugging iron to control heat. Cook for 1 1/2 to 2 minutes, the cookies should easily lift out with fork. Place on cooling rack or on paper towels to cool.





    Directions for frosting

    Eggnog Sandwich Cookies. I have made them for family, friends and parties and they have been a hit every time.





    Ingredients: 1 C (2 sticks) unsalted butter, softened; 1 1/4 C plus 1 T granulated sugar, divided; 1 egg yolk; 1/2 C sour cream; 2 1/2 C all-purpose flour; 1/4 tsp salt; 1/2 tsp grated nutmeg; 1/4 tsp ground ginger.





    Filling: 1/2 C (1 stick) unsalted butter, softened; 1/4 C shortening; 2 1/2 C powdered sugar; 2 T eggnog or milk





    1) Preheat oven to 350F. Lightly grease cookie sheets. 2) For cookies, combine butter and 1 1/4 C sugar in large bowl. Beat with mixer at medium speed until light and fluffy. Add egg yolk; beat until blended. Add sour cream; beat until well blended. Combine flour and salt in medium bowl. Gradually add flour mixture to butter mixture, beating until well blended. 3) Shape dough by rounded teaspoon balls. Place on prepared cookie sheets; flatten slightly. Combine remaining 1 T sugar, nutmeg and ginger in small bowl; sprinkle over cookies. 4) Bake 12 minutes or until edges are light brown. Cool about 5 minutes on cookie sheets. Remove to wire racks to cool completely. 5) For filling, combine butter and shortening in medium bowl. Beat with mixer at medium speed until well blended. Add powdered sugar and eggnog or milk; beat until well blended. Spread or pipe filling on bottoms of half the cooled cookies. Top with remaining cookies.





    Makes about 6 dozen cookies
    One thing I've been making a lot of lately is peanut butter balls. I just took some to church and they absolutely VANISHED.





    Mix together three tbsp. of butter and half a cup of peanut butter (I just use store brand creamy) with a cup of sifted powdered sugar, a little vanilla (I never measure), a good pinch of salt (the secret ingredient that makes them special) and half a bag of toffee chips. If it's too soft to work with, chill it for awhile then just roll into balls and lay them out on some parchment or waxed paper.





    I then melt a bag of milk chocolate chips with a little bit of wax (not absolutely necessary) and another pinch of salt in a double boiler. You could cheat and melt it in the microwave, but it gets cold too fast. I then just drop a ball in and roll it around and pick it back up with a fork. It'll take a little while, but it's easy and well worth it.





    Don't be afraid to put salt in it--it really balances it out.

    Basic cookie recipe:





    Basic Vegan Sugar Cookies





    1 戮 cups all-purpose flour


    录 cup cornstarch


    1 tsp. baking powder


    1 stick (4 oz. or 陆 cup) vegan margarine, softened (I like Earth Balance )


    戮 cup light brown sugar


    录 cup soymilk, vanilla or plain (I used plain)


    1 tsp. real vanilla extract





    1) Preheat the oven to 350 degrees F. Lightly spray a baking sheet with cooking spray.


    2) Stir together flour, cornstarch, and baking powder in a bowl.


    3) In a separate bowl, use an electric mixer to beat the margarine to soften it (this step was a bit tricky for me, as most of the margarine got stuck in the beaters. Even if that happens to you, carry on; your cookie dough should be fine because when you add the sugar, the margarine will become unstuck and blend into the sugar). Add the sugar to the margarine and beat to combine well. Add the soymilk and vanilla to the margarine-sugar mixture and beat for another 30 seconds or so to combine until smooth.


    4) Add the flour mixture to the margarine mixture and beat for about 30 seconds to make a smooth thick batter.


    5) Use your hands to shape the batter into 1- to 1.5-inch balls. Place the balls on the prepared baking sheet and bake for 10-12 minutes until cookies look a bit dry on top. Try not to overbake them. Cool cookies on sheets for a minute or two and then transfer them to wire racks to cool completely. Cookies can be stored at room temperature in an airtight container for at least three days with no loss of flavor or texture.

    1 German chocolate cake mix


    3 heath bars, crushed


    1 c. semisweet chocolate chips


    1 14oz. can sweetened condensed milk





    1) Heat oven 350. Grease and flour 9x13 pan. Prepare cake mix as directed; pour into prepared pan. After 10 min. of baking, sprinkle with chocolate chips. Continue baking until cake is done. While cake is still hot, poke holes in it with handle of wooden spoon. Pour sweetened condensed milk over cake; let cool. Top with caramel sauce, then whipped topping. Sprinkle with candy bars.

    Try this recipe for molten chocolate cake. It is orgasmic. The middle is sort of like brownie batter or chocolate mousse. It's pretty easy and my favorite dessert. The instructions are kind of long, so I'll leave you the link for the complete instructions:

    The abbreviated version:


    1. preheat oven to 400 degrees. generously butter 4 3/4 cup molds, custard cups, ramekins, or muffin tins (I use those little pyrex dishes) and dust with sugar.


    2. melt 1/2 cup butter with 6 oz. semisweet or bittersweet chocolate


    3. separate 3 eggs and beat yolks with 1/3 cup sugar until thick and lemon colored. beat in 1 teaspoon vanilla and then fold in chocolate mixture.


    4. In a clean bowl, beat egg whites till frothy, add 1/8 teaspoon cream of tartar, 1 teaspoon sugar (add slowly), and then beat until stiff peaks form.


    5. Gently fold whites into yolk mixture. Divide among molds.


    6. Bake 8-10 minutes until outside edges are set. (I'd say that it takes longer like maybe 15 minutes or so). It's helpful to have all molds on a baking sheet.


    7. Take out of oven, let sit for 1 minute, run knife around edges, and invert on serving plate.

    陆 cup butter


    3 ounces unsweetened baking chocolate


    1 陆 cup sugar


    3 eggs


    1 陆 cup all purpose flour


    陆 teaspoon baking powder


    陆 teaspoon salt


    1/3 cup Kahl煤a庐





    Heat oven to 350茠 F (180茠 C)


    Grease an 8 X 8 inch cake pan.


    Mix together the flour, baking powder, and salt, and set aside.


    In a saucepan over low heat, melt the butter and chocolate, stirring frequently until smooth.


    Remove the saucepan from heat, and let cool.


    Beat eggs and sugar until light. Mix in cooled chocolate mixture and Kahl煤a庐 flour mixture. Spread in the cake pan and bake for 40 minutes or until a toothpick inserted in the middle comes out clean.


    Cool slightly, then brush the top with about 1-2 tablespoons of Kahl煤a庐.

    this is not chocolate, but it is a really good cake and very simpleto make, start with a package of plain yellow cake mix. make according to the package directions. after baking let cool. then make asmall packGE OF ORANGE JELLO. mix withe hot wateruntil completely dissolved. after jello mixture has cooled add the rest of the liquid to the jello. only instead of adding the cup of cold water, ad one cup of orange soda. using a drinking straw poke the top of the cake with small holes. then pour the jello mixtureover the cake and let stand for about 30min. until completely cooled. for the topping use one full tub of cool ehip extra creamy cool whip. spread evevly over the top of the cake. garnish the top with mandarin oranges.this will stay moist for at least a week/ but must be refrigerated.

    1 cup granulated sugar


    1/2 cup all-purpose flour


    2 tablespoons cocoa


    3 eggs


    1 (12-ounce) can evaporated milk plus water to make 2 cups


    1 teaspoon vanilla extract


    1/4 cup butter


    1 (9-inch) baked pie crust


    Whipped topping to serve





    In a medium saucepan, combine sugar, flour and cocoa. In a small bowl, beat eggs into milk; add to dry ingredients in pan. Mix until smooth. Cook over medium heat, stirring constantly until thick.





    If lumps form, use an electric mixer and beat until smooth after removing from heat. Add vanilla and butter; beat in. Pour into pie crust; set out to cool. Serve with whipped topping. This pie tastes best after overnight refrigeration.

    Ingredients:


    1 C. flour


    1 C. chopped nuts (use pecans)


    1 stick (1/4 lb) butter, softened

    1 C. confectioner's sugar


    2 cartons (8 oz each) whipped dessert topping, divided


    3 C. milk


    2 (3 1/2 oz.) pkg. Instant chocolate pudding mix











    Preparation:


    In medium bowl, combine flour, nuts and butter; mix thoroughly and press into the bottom of a greased 9x13-inch baking dish. Bake at 350 degrees 20 minutes. Cool on wire rack. In medium bowl, with electric mixer; combine cream cheese, confectioner's sugar and one carton of the dessert topping. Beat until well combined and spread over cooled cake layer in dish.


    Refrigerate. In large bowl with electric mixer, combine milk and chocolate pudding mixer; beat three minutes at low speed until thickened and glossy. Spread evenly over cream cheese layer in dish. Refrigerate until pudding is set. Spread remaining carton of dessert topping (like Cool Whip) evenly over chocolate layer and refrigerate until


    serving time. You can decorate the top with chocolate shavings or chopped nuts.

    Chocolate souffle


    (yields 9-10 servings)





    4 eggs


    vanilla extract


    250 gr melted butter


    500 gr plain (black) chocolate


    1 cup self-raising flour


    1 cup sugar


    cream (for serving)





    Melt the chocolate either over boiling water or microwave for about 2 min (depends on temperature - make sure you don't burn it!). Then mix all ingredients together in the mixer. Then divide the mix in small cups destined for chocolate souffle and bake them for 6 minutes in 180. It is essential to serve with cream on top, so as to counterbalance the chocolate flavour.
