heres some of my favourites





Sugar Free Rice Pudding Recipe


INGREDIENTS:


4 cups rice milk


1/3 cup rice


1/4 cup brown rice syrup


2 tbsp maple syrup


1/4 tsp cardamom or cinnamon


1/4 cup raisins (optional)


PREPARATION:


Simmer the rice in the rice milk for about 20 minutes, or until rice is cooked. Remove from heat and add remaining ingredients, stirring well to incorporate.


Chill before serving.





carrot cake





Ingredients


2 cups whole wheat flour


1 tsp baking powder


1 tsp baking soda


1/4 tsp salt


1 1/4 cups water


1 cups dates, chopped


1 cup raisins


1 tsp cinnamon


1 tsp ground ginger


1/2 tsp ground cloves


1/2 tsp ground nutmeg


1/2 cup carrot, grated


1/3 cup frozen orange juice concentrate, thawed





Directions


In a small bowl, mix together the flour, baking powder, baking soda, and salt and set aside.


Combine the water, dates, raisins, cinnamon, ginger, cloves, and nutmeg in a small saucepan.


Bring to a boil, reduce heat, and gently simmer for 5 minutes.


Place the shredded carrots in a large bowl and pour the hot water mixture over them, and allow to cool completely.


Add the orange juice concentrate to the carrot mixture and mix well.


Add the dry ingredients to the wet ingredients and stir well to combine.


Pour the batter into a lightly greased cake pan.


Bake at 375 degrees for 45 minutes, or until a toothpick inserted in the center comes out clean.





apple pie





Ingredients


Pastry for double crust 9 inch pie


3 T cornstarch


7 1/4 t. Equal for Recipes OR 24 packets Equal sweetener OR 1 cup Equal Spoonful


3/4 t. ground cinnamon


1/4 t. ground nutmeg


1/4 t. salt


8 cups sliced cored peeled Grany Smith OR other baking apples (about 8 medium)





Directions


Roll half the pastry on floured surface into circle 1 inch larger than inverted pie pan. Ease pastry into pan.


Combine cornstarch, Equal, cinnamon, nutmet, and salt, sprinkle over apples in large bowl and toss. Arrange apples in pie crust.


Roll remaining pastry into circle large enough to fit top of pie. Cut hearts into pastry with cutters; place pastry on pie, seal edges, trim and flute. Press pastry hearts on pastry.


Bake in preheated 425掳F oven until pastry is golden and apples are tender, 40 to 50 minutes. Cool on wire rack.

Sugar Free Butter Pecan Cookies Recipe





Ingredients


3 cups sugar free biscuit mix


1/3 cup pecan pieces


1 cup pitted dates


1/3 cup warm water


2 teaspoons vanilla


1/2 cup butter


Fruit sweetened jam


Pecan halves





Directions


Preheat oven to 350.


Use a blender or food processor to chop pecan pieces until finely ground.


Sift biscuit mix then stir in pecans and set aside.


Use blender or food processor to pur茅e dates gradually adding egg whites and warm water.


Beat several minutes until creamy.


Melt butter and then stir in date cream and vanilla.


Fold liquid ingredients into biscuit mix.


Stir only until blended.


On an ungreased cookie sheet form dough into cookies 1/4'; thickness by 2'; diameter.


Press a thumb print into the middle of each and decorate each cookie with jam and/or pecan halves.

One of my favorite sites for vegan dessert recipes is vegan-food.net. They have several recipes that don't call for sugar.
Frozen bananas in a food processor with some rice milk, walnuts, and cinnamon. If you want to sweeten it up a bit without spiking your blood sugar, try agave nectar! I make this for breakfast once in a while and it feels like such a treat to have ';ice cream'; for breakfast.





Someone here once recommended using frozen bananas and I'm so grateful because it's really yummy!
Apricot and papaya fool





150g ready to eat dried apricots


25g dried papaya


450ml sweetened soya milk


6 strawberries or 1 kiwi fruit, to decorate





1 Soak the dried apricots and papaya in the soya milk overnight.


2 Transfer the dried fruit and soya milk to a food processor and blend to a smooth consistency. Add the oil and blend again.


3 Divide the mixture between 6 small glass dish's, then refrigerate until set.


4 Decorate with a sliced strawberry fan or some slivers of kiwifruit. Serve with coconut cream.
