Looking for Dessert recipes for a Texas themed going away Party?

My neighbors are moving to texas, any good recipes that are popular and typify the Lone Star State?Looking for Dessert recipes for a Texas themed going away Party?
As a born and bred Texan - Here's a full meal for you -


Appetizer - chips and queso (mixing Velveeta and Rotel make a good queso)


Entree - Real Chili (not the yankee crap) or BBQ Brisket


Dessert - Pecan Pie (the recipe on the dark Caro syrup bottle is good) or Tres Leche Cake (recipe to follow)


Drinks - Beer and Margaritas (heavy on the salt and tequila)





Tres Leche Cake





Ingredients 鈥?


2 cups biscuit mix


1 cup sugar


1 tsp vanilla


6 eggs


陆 cup oil


1 can pineapple slices in juice


La Lechera milk


Condensed milk


Half %26amp; half


Maraschino cherries


Whipped Cream





Preparation 鈥?


Mix together first 5 ingredients. Pour into greased %26amp; floured cake pan. Bake @ 350潞 for about 30 鈥?45 minutes until done. Mix together pineapple juice, La Lechera, condensed milk, and half %26amp; half. Set aside. Take cake and poke holes all throughout it using the handle of a wooden spoon. Pour milk mixture all over cake until saturated. Refrigerate for about 1 hour. Spread whipped cream all over cake. Put a cherry over each hole. For my parents 50th Birthday I threw a Texas themed Surprise party. We live in TX and had family members coming from out of state so I wanted a country theme. We had BBQ, for dessert I made some Cobbler Blueberry and Apple with ice cream, if you can't do a cobbler a pie will work. Red Velvet cake is also big out here.

Chocolate Texas Sheet Cake


1 cup butter, cubed


1 cup water


1/4 cup baking cocoa


2 cups all-purpose flour


2 cups sugar


1 teaspoon baking soda


1/2 teaspoon salt


2 eggs, lightly beaten


1/2 cup sour cream





FROSTING:


1/2 cup butter, softened


3-3/4 cups confectioners' sugar


1/4 cup baking cocoa


1 teaspoon vanilla extract


5 to 6 tablespoons milk


In a large saucepan, bring the butter, water and cocoa to a boil. Remove from the heat. Combine the flour, sugar, baking soda and salt; stir into butter mixture. Combine the eggs and sour cream; stir into butter mixture until blended.


Pour into a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 350掳 for 18-25 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.


For frosting, in a large mixing bowl, cream the butter and confectioners' sugar. Add cocoa, vanilla and enough milk to achieve desired consistency. Spread over cake. Yield: 20 servings.

Texas Sheet Cake

White Texas Sheet Cake

Chocolate Pound Cake I





2 cups all-purpose flour


2 cups granulated sugar


1 teaspoon baking soda


1/2 teaspoon baking powder


1 teaspoon salt


3/4 cup water


3/4 cup buttermilk


1/2 cup vegetable shortening


2 large eggs


1 teaspoon vanilla extract


4 squares baking chocolate





Direction





1)Preheat oven to 350*F.


2)In a large mixing bowl, combine flour, sugar, baking soda, baking powder, salt, water, buttermilk, shortening, eggs, and vanilla. Beat for 1/2 minute on low speed with an electric mixer, scraping the bowl often.





3)In a saucepan, melt chocolate squares; cool. Add to the buttermilk mixture. Then, beat for 3 minutes on high speed.





4)Pour into a loaf pan and bake 35 to 45 minutes.
As someone who lives in Texas... I can't think of an offical dessert, but said....





Flan is continuous favorite


pecans are the state nut, so pecan pie


BBQing is indeed a favorite (and yes, BBQ sauce goes on at the very end!) - a grilled pineapple could pass.
Brer Rabbit Blackberry Cobbler


Ingredients





* 2 cups blackberries, sweetened stingily


* 1 Tbls flour (heaping)


* 1 cup flour


* 1/4 tsp salt


* 2-1/2 Tbls butter, softened


* 1/3 cup milk


* 1 cup sugar


* 1/2 cup water


Directions





Mix berries with tablespoon of flour and place in deep baking dish. Cover with crust made of flour, salt, butter and milk. Boil together until sugar is melted, the cup of sugar and the 1/2 cup water. Pour over crust. Bake at 325 degrees until brown (approximately 1 hour).
