Angel Food Dessert - Low Fat


This is an almost guilt-free dessert that looks and tastes delicious.





1 12-ounce Angel Food Cake (loaf)


1/2 tub fat-free whipped topping


1/2 cup strawberry preserves


1 cup sliced fresh strawberries





Slice angel food cake horizontally into thirds. Spread preserves on bottom layer, followed by 1/3 whipped topping. Spread the next layer with preserves followed by whipped topping, and place on top of bottom layer





Add the top layer of angel food cake. Spread with remaining whipped topping, then arrange sliced strawberries on top. Refrigerate for at least an hour. Slice using a serrated knife.


Serves 6.

Peach Blackberry Crisp - Low Fat


Fresh, plump peaches and big juicy blackberries from the farmers' market inspire this delicious late-summer dessert, although it's perfectly fine to use frozen peaches and blackberries. Although the total fat content has been reduced we keep a little butter in the crisp topping.





4 large fresh peaches (about 2lbs), skinned, stoned and sliced


1/2 dry pint fresh blackberries


1/4 cup sugar


1 tbsp cornstarch


1 tsp lemon zest

Topping:


1/2 cup quick oats


1/4 cup firmly-packed brown sugar


1/3 cup all-purpose flour


1/4 tsp nutmeg


1/2 tsp cinnamon


1 tbsp cold butter


1 tbsp canola oil





Preheat oven to 375 degrees.


Arrange peaches in an 8-inch square glass baking dish. Scatter blackberries on top. Stir sugar and cornstarch together and sprinkle over fruit, followed by lemon zest. Stir fruit.


In a medium bowl, combine oats, sugar, flour, nutmeg and cinnamon. Cut or rub in butter into the oat mixture. Add oil, then stir gently to combine. Sprinkle topping over the fruit. Bake for 35-40 minutes, until the fruit is bubbling and the top is slightly browned. Serve warm with a scoop of frozen non-fat yogurt. Serves 6

Summer Cheesecake Low Fat


Cheesecake is such a rich dessert that you really need only a small piece. Here's a low fat version that uses a mix of light and fat-free cream cheese and low-fat cottage cheese to shave off a significant number of fat calories. Top with fresh berries.





15 ginger or vanilla wafer cookies (such as Mi-Del brand)


Cooking spray


1 8-ounce pack fat free cream cheese, softened


1 8-ounce pack light cream cheese, softened


1 cup low-fat cottage cheese


1 egg


4 egg whites


Zest and juice of 1 lemon


1 cup sugar


2 cups seasonal berries





Preheat oven to 350 degrees. Spray a 9-inch springform pan with cooking spray. Place cookies in a small food processor and make crumbs鈥攐r place cookies in a large resealable bag and crush with a rolling pin.


Scatter crumbs in the bottom of the pan and press down.





Bake for 10 minutes, remove from oven and allow to cool.


Meanwhile, place cream cheeses and cottage cheese in a large mixing bowl or in a blender. Beat with an electric mixer or blend until smooth and creamy. Add egg and beat/blend into cream cheese mixture, followed by egg whites, beating until blended. Add lemon juice, zest and sugar, and beat/blend until well combined.





Empty cheesecake filling into springform pan. Bake in oven for 50 minutes, until the center is almost set. Remove from oven. Run a palette knife around the outside of the cheesecake to allow air to circulate a little, and cool on a wire rack. Carefully remove rim of pan, then chill for at least 4 hours.





Top with berries. Serves 12

Summer Parfaits - Low Fat


If you're looking for a quick and easy summer dessert, try these simple summer parfaits, which look attractive when layered in clear glasses or dessert bowls.





1 3 1/2 ounce pack of instant vanilla pudding and pie mix


1 1/2 cups fat-free milk


2 cups of fresh mixed berries, divided


1 1/2 cups fat-free whipped topping


Berries for garnish





Whisk vanilla pudding and pie mix using fat-free milk. Whisk for 2 minutes. Leave pudding to stand and thicken for a few minutes. Divide 1 cup of fruit between four dessert glasses. Use half the vanilla pudding, divided among the four glasses.





Add half the whipped topping, followed by another layer of fruit, pudding and whipped topping. Garnish with a slice or two of strawberries or a few blueberries. Refrigerate until ready to serve.

It has recipes for quite a few tasty desserts that can be prepared easily from home ..
Fruit sherbets will do . a mixture of low fat yoghurt and fresh dates ,beaten well in a blender with a little vanilla will be good .
I was just at a potluck and one girl brought a store bought Angel Food Cake, split it in half (along the equator) and pour orange yogurt and put the top back on. It was good.
