You can omit the alcohol and coffee - serve with fresh raspberries and cream, they 'cut' through the chocolate. Have made this for someone who is Wheat Free and they loved it, I did too!

Ingredients

Serves 6

Prep: 20 min

Cook: 50 min

200g dark, bitter chocolate

1 tbsp strong espresso coffee

1 tbsp rum or brandy

150g caster sugar

150g butter

100g ground almonds

5 eggs, separated

Icing sugar for dusting

METHOD

Melt the chocolate, coffee, rum or brandy, sugar and butter in a bowl sitting in a pot of barely simmering water. Remove from the heat and stir until well mixed.

Add the ground almonds and mix well. Beat in the egg yolks, one by one.

Beat the egg whites until stiff and peaky, and stir a couple of spoonfuls into the chocolate mixture to lighten it, before gently folding in the rest.

Turn into a buttered and floured 20cm (8in) round or square cake tin and bake at 180C/Gas 4 for 40 to 50 minutes (less if you like it fudgey, more if you like it cakey).

Leave to cool before removing gently from the tin, and dust with icing sugar to serve.

Swedish Nut Bars

6 eggs

1 1/2 cups white sugar

3 1/2 cups finely ground almonds

3 teaspoons almond extract

Pre-heat oven to 325 degrees F (165 degrees C). Prepare a 9 x 9 x 2 inch baking pan by lining bottom with either waxed paper or parchment paper. Grease the paper.

Separate the eggs and reserve the whites. Beat egg yolks until thick and tripled in volume. Add sugar slowly, beating until very thick. Slowly fold in nuts and extract. Beat egg whites until stiff but not dry. Fold them into the yolk mixture. Pour batter into prepared pan.

Bake for one hour or until done. Cool in pan for 10 minutes then turn out and remove paper. Cool completely. Cut as needed.
my girlfriend is gluten free--for dessert we buy gluten free pancake mix and thin the batter out. then we make crepes and stuff them with cream cheese and fresh berries. YUM!
